The Executive Chef will be responsible for all culinary operations and the ideal candidate will be an energetic, polished Culinary Professional. Seeking candidates with a proven track record for developing, leading, and engaging culinary teams.
This Executive Chef designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel at a University account that has operations on two campuses. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus.
Primary responsibilities include managing culinary operations for a dining hall producing approximately 1,400 meals per day, with catering operations on both the main and a satellite campus. This is a 7 day operation.
Manages a sous chef, 4 culinary supervisors, and approximately 20 culinary staff.

manage food costing, controls and compliance;
develop menus and manage inventory;

have knowledge of special diets and allergens; and
knowledge of Sodexo Food Management System (FMS) is preferred.

a strong culinary background, with the demonstrated ability to stay current with new culinary trends;
excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies;
previous experience working in a high volume facility; and
strong management skills.

Qualifications & Requirements
Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
