Unit Description

Sodexo is seeking an experienced Chef de Cuisine to join a talented leadership team at Loyola Marymount University, in sunny Los Angeles, California. This EXECUTIVE CHEF 1 position works as a very hands-on chef at the Lair Marketplace at Loyola Marymount University and reports to the Executive Chef. The Executive Chef 1 oversees the 9 food retail platforms of the Lair Food court, the Children'ss Center lunch program and for the Community table. All you care to eat program on Thursday/Friday evenings and Saturday/Sunday brunch. The Chef is responsible for training, scheduling and mentoring a staff of approximately 70 cooks, line cooks and prep cooks in this platform retail unit.

Responsibilities for this hands-on role will include menu planning, food prep, inventory management, purchasing, food & labor costing, scheduling, safety/sanitation & catering processes. This position will also have direct customer and client interaction.

The ideal Chef Candidate will have:

  • 4+ years of experience in a fast paced retail restaurant/catering environment

  • Proven track record with cost controls, quality controls & team management

  • Computer literacy

  • Excellent communication & customer service skills

  • Strong working knowledge of culinary processes & food safety/sanitation

  • Culinary degree (preferred), or comparable related field experience

  • Seeking bilingual candidates; the ability to speak Spanish will assist in managing the diverse team #LI

Position Summary

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution

Qualifications & Requirements

Basic Education Requirement - Associate's Degree

Basic Management Experience - 2 years

Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
