Unit Description

Sodexo Universities is looking for an Executive Chef 1 to join our team at Tarleton State University in Stephenville TX . Sodexo has partnered with Tarleton State for over 10 years. The current food landscape consist of 1 residential dining hall, 7 retail locations (mix of Sodexo and National brands) and catering operations. Total MV of $10million. The Executive Chef 1 will report the Sr. Executive Chef and will oversee the culinary operation for the dining hall and retail locations.

Responsibilities for this Executive Chef 1 role will include VIP catering menu planning, client interaction, food forward presentation skills, food prep, inventory management, purchasing, food & labor costing, scheduling, safety/sanitation & employee training. This position will also have direct customer and client interaction.

The ideal candidate will have:

  • Large scale College/University culinary experience;

  • Strong culinary background with experience in catering and banquets;

  • Emphasis on food presentation, quality, execution, menu design & implementation;

  • Focus on customer service excellence;

  • Demonstrated experience providing strong leadership, including supervision, direction and training, to a diverse team of employees;

  • Focus on food and physical safety and sanitation;

  • Experience managing food and labor cost controls to meet targets;

  • Understanding of food allergens and special dietary needs;

  • Strong understanding of financials as well as strong analytical skills: ability to demonstrate proven results with food and labor cost, and controllable expenses.

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution

Qualifications & Requirements

Basic Education Requirement - Associate's Degree

Basic Management Experience - 2 years

Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
