Job #73190 - Seeking an Executive Chef (I) for Fort Hudson Health System in Fort Edward, New York. Fort Edward / Glen Falls, NY are just an hour north of Albany . This is a 200 Resident Skilled Nursing and Independent Living community; The Oaks at Fort Hudson.

Are you a passionate Chef (25%) with the ability to assist in managing (75%); a budget of 1.8 million, 30 union employees, modified textured diets, inventory and ordering, HACCP monitors for food safety and sanitation, catered events, employee training, food and labor cost controls? Your Skills Checklist for this opportunity;

Culinary Training and Servsafe Certificate

Food production and catering experience

Skills to train & develop 30 union hourly employees

Working knowledge of HACCP protocols for regulatory compliance

Experience with Modified Textured Diets

Hands on skills with inventory management, on-line ordering

Computer skills; Food & Labor Management software

Working knowledge of recipe compliance and food quality standards

Experience with labor and food cost controls and compliance

Typical schedule; 9am-6pm with rotating weekends / holidays

Position Summary

Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution

Key Duties

-Executes the culinary function

-Customer & Client satisfaction

-Manages food & physical safety program.

Qualifications & Requirements

Basic Education Requirement - Associate's Degree

Basic Management Experience - 2 years

Basic Functional Experience – 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
