Sodexo is seeking an Executive Chef for a premier Showcase Campus Dining account at Muhlenberg College in Allentown, PA.

Muhlenberg College is a highly selective, private, four-year liberal arts college in the Lehigh Valley.

The campus features The Wood Dining Commons, a spectacular dining room and state of the art food gallery housing nine restaurant platforms including two kosher kitchens and a fully outfitted production kitchen. Qualifications include:

  • Innovative Gluten Free, Vegan/Vegetarian, and custom menus.

  • Excellent customer service and effective guest-interaction skills.

  • Strong Teaching/Training abilities.

  • Second-to-none quality food, service and staff performance.

  • Experience in high-volume production for up to 4000 meals per day.

  • Strong writing, costing, menu development and pricing skills.

  • Experienced in labor management and food production control systems.

  • Strong commitment to systems to support consistency in operations.

  • Formal culinary degree/training a plus

  • ServSafe certification

  • HACCP certification

  • P&L experience is required

  • Ability to multi-task and able to identify and efficiently resolve operational challenges

Responsibilities include:

  • Creating schedules and supervision of up to 50 cooks per shift.

  • Management a budget of over 5M annually.

  • work regularly with college departments and student organizations

  • This twelve-month position entails some weekends, late nights and holidays, based on account needs.

  • Continuous Training for advancement of staff.

Position Summary

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.

Key Duties

  • Implements & coordinates the culinary function.

  • Directs & trains cooks & utility workers.

  • Ensures food preparation & production meets operational standards.

  • Manages catering & retail areas.

  • Customer & Client satisfaction.

  • Financial management to include food cost & labor management.

  • Manages food & physical safety programs.

Qualifications & Requirements

Basic Education Requirement - Associate's Degree

Basic Management Experience - 2 years

Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
