Sodexo Campus Services is seeking a creative, highly-motivated, energetic and well organized Executive Chef for the University of The Incarnate Word located in San Antonio, TX . Position is the senior level technical culinary expert and trainer of the food production and service teams. Ideal candidate has: a Culinary Degree/Trade School Certificate, a current Servsafe Certification, a high volume food production background for; resident dining, high volume retail, and upscale catering in a multi-unit campus, purchasing experience, up to date knowledge of food trends and diverse cuisines, the ability to analyze revenue streams and cost centers, experience with inventory management.
Responsibilities include ability to work in food & labor management systems for financial management of 6.5 million in annual volume. This is a high visibility role in daily operations and during VIP functions where position will interface with the client and customers on a regular basis. The successful candidate oversee a staff of culinary professionals. In this pivotal role, the Executive Chef leads focus groups to engage clientele in the customer service enhancement process. Position is involved with network groups, mentoring and other student programs. Having energy conservation experience with sustainable programs would be helpful in this role. Successful candidate will manage the daily Resident Campus Dining program, Campus Catering along with two private high schools.
This is a year round position with a varied schedule that may include some weekend and holiday management coverage. Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.
Implements & coordinates the culinary function.
Directs & trains cooks & utility workers.
Ensures food preparation & production meets operational standards.
Manages catering & retail areas.
Customer & Client satisfaction.
Financial management to include food cost & labor management.
Manages food & physical safety programs.
Qualifications & Requirements
Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
