Sodexo is seeking an Executive Chef 2 for for Tripoint and Lake West Hospitals. Position will office out of the Lake West location, a 240 bed acute care facility and spend one day a week at Tripoint, (Tripoint is 100 beds). Position will be responsible for employee scheduling and will oversee 75 plus employees. Position will be responsible for all aspects of food service including patient services, catering and retail. Will oversee 1 million in Retail and 250k in catering.
Job Responsibilities and specifics:
Directly manages catering cooks and catering attendants on a daily basis
Manages culinary aspects of executive dining room operations
Computer Skills are a must
Must be able to manage a diverse group
Daily client interaction
Passionate about high quality food and presentation
Varied work shifts
High volume catering operations. Caterings range from 4-4,000
Must be able to customize menus with creativity and implement current trends
Must be flexible with clients
Must be able to deal with demanding clients
Must be able to troubleshoot and think quickly on your feet
Managing the daily food production process including production planning and controls
Ensuring Sodexo Culinary Standards including recipe compliance and food quality
Maintaining and ensuring HACCP standard
Responsible for yearly evaluation and goals for cooks
Manages all aspects catering menus
Conducts walk through of all areas
Maintains the Food Management System
Responsible for Food and Physical Safety and all HACCP record keeping
Responsible for maintaining Gold Check standards

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.
Qualifications & Requirements
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
