Sodexo is seeking a results driven, highly motivated Executive Chef 3 to join our food services healthcare team at The University of Maryland St. Joseph Medical Center in Towson, MD . The University of Maryland St. Joseph Medical Center is a 247 bed acute care hospital with 70 union hourly employees and 5 managers.

The Executive Chef will report directly to the General Manager and primarily be responsible for assisting the patient meal service program, procurement, and other special culinary projects. This account recently converted from the At Your Request meal service program to the Expressly For You meal service program. In addition to the recent changes in patient services, The University of St. Joseph Medical Center has a beautiful retail outlet and provides catering services. The Executive Chef should have a strong culinary background with experience in patient services, and production. Union experience is a plus.

  • manage the daily food production including production planning and controls;

  • ensure Sodexo Culinary Standards including recipe compliance and food quality;

  • manage food costing, controls and compliance;

  • develop menus and manage inventory;

  • have high expectations for customer service and quality of food;

  • have the ability and willingness to develop and train front-line employees;

  • have a passion for food and innovation;

  • have knowledge of special diets and allergens; and

  • knowledge of Sodexo Food Management System (FMS) is preferred.

  • a strong culinary background, with the demonstrated ability to stay current with new culinary trends;

  • excellent leadership and communication skills with the ability to maintain the highest of standards and implements company policies;

  • previous experience working in a high volume facility; and

  • strong management skills.

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in the largest accounts or in an account requiring a highly skilled Executive Chef. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree

Basic Management Experience - 3 years

Basic Functional Experience - 4 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
