Sodexo's university segment has a new opportunity for an Executive Chef 1 at our growing account located at Greenville College located in Greenville, IL (43 miles east of St. Louis). Greenville College has a 1100 students with 800 living on campus. Our dining services consists of resident dining, retail and catering. Reporting to the General Manager, the Executive Chef will oversee 12 associates and 4 supervisors and 2 crew heads in the dining hall. The Executive Chef will oversee Dining hall and kitchen. In addition to culinary management duties, our Executive Chef will have the ability to be "hands on" in the kitchen and has the ability to be expressive with culinary. Responsibilities will include menu creation, focus on high quality presentation, ensuring proper portioning and strong compliance with HACCP and Food Safety. Ideal Executive Chef will be outgoing and enjoy being engaged with students, clients and customers.

The ideal candidate will have: College/University culinary and culinary management experience -- culinary program experience -- catering experience -- experience with food and labor management systems (FMS) -- experience with on-line ordering -- experience training, leading and mentoring a culinary staff -- skilled at controlling food costs!

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a small account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree

Basic Management Experience - 1 year

Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
