Unit Description

Sodexo on the campus of Marquette University is seeking a dynamic Executive Chef 2 who will oversee a large resident dining hall on campus. Total sales volume is $2.5M. Daily responsibilities include proper cash handling, scheduling and training of staff, ordering, inventory for each location, customer service/adherence of brand standards and marketing using all Sodexo tools available. Reporting to the Operations Manager, this Executive Chef is responsible for the exceptional day to day service to our students, faculty and staff. This position oversees 1 salaried evening food service manager, 1 hourly supervisor, 25 FT union staff and 100 student workers.

The best qualified candidate will have the following :

  • College/University food service management experience, preferably in a high-volume resident dining setting

  • Experience with multi-unit, quick-service food outlets helpful

  • Experience training and leading a food staff (union experience is helpful)

  • Ability and willingness to lead and train an hourly staff

  • Experience with ordering and inventory practices

  • Knowledge of food and physical safety programs

Typical work schedule varies but candidate must have flexibility to work evening and weekend shifts when needed. This position also assists in other areas of campus when needed.

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in a medium to large account. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree

Basic Management Experience - 2 years

Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
