Long tenured account is seeking a culinary expert/ Executive Chef 3 for their large volume account in Bloomington, IN ! Bloomington is in the southern region of Indiana. It is the seventh-largest city in Indiana and the fourth-largest outside the Indianapolis metropolitan area.

The IMU Restaurants and Catering Executive Chef is responsible for overseeing all culinary aspects of the award winning catering operations and the signature restaurants in the Indiana Memorial Union on Indiana University’s Bloomington campus. The responsibilities encompass operational duties and financial responsibilities, providing leadership and management of the kitchen staff, and developing high quality products and growing profitability of the IMU Restaurants and Catering business.

The essential functions of the position include, but are not limited to, the following:

  • Drive and strengthen the Indiana Memorial Union brand image helping to ensure every guest has a positive memorable experience that would bring them back

  • Control labor and operating expenses through effective planning, budgeting, purchasing decisions, and inventory control while focusing on creative cost control and revenue generation solutions to maximize profit

  • Effectively plan and develop customized catering menus for both University and community clients based on effective special theme requests and utilization of seasonal and local ingredients.

  • Ensure exceptional quality of all ingredients, preparation, and plating of food and beverage items.

  • Ensure that the highest sanitation standards are maintained and trained as well as the cleanliness and organization of the kitchen.

  • Set controls and standards ensuring quality and consistency? This includes the ability to follow proper purchasing specifications as well as monitor and review operating criteria and display an awareness of the importance of food preparation and quality

  • Be able to effectively engage all employees and encourage individual competency growth.

  • Coordinate the selection, training, coaching, ongoing development, motivation, and evaluation of employees, and culinary managers to ensure ever guest has a positive memorable experience

  • Provide corrective counseling, progressive discipline, including termination, of underperforming staff

  • Be visible to guests and staff, promoting positive public relations, handle concerns, and special requests

The ideal candidate will have:

  • At least five years prior kitchen management experience as an executive chef or equivalent in a full service restaurant, conference center, resort, and/or university. Have successfully managed a culinary team in excess of twenty people with a comprehensive understanding of Kitchen finances, organization, and be driven to achieve positive results.ACF - Certified Executive Chef preferred but not a requirement

Position Summary

Designs, supervises, coordinates and participates in activities of cooks and other kitchen personnel in the largest accounts or in an account requiring a highly skilled Executive Chef. This position is recognized as the technical expert, teacher and trainer for other chefs and cooks within the account. Selects and develops recipes and other items for clients. Develops menu, implements and trains HACCP, oversees/purchases food, establishes production levels and inventory controls, interviews and hires new chefs, manages/controls food cost issues and offer solutions, may train other chefs outside account. May cook selected items, and plan or price menus. Typically has chefs and cooks reporting to this position.

Qualifications & Requirements

Basic Education Requirement - Technical, Trade, or Vocational School Degree

Basic Management Experience - 3 years

Basic Functional Experience - 4 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
