Sodexo , leader in quality of daily life solutions has a great opportunity for a Food Production Manager at Frankfort Regional Medical Center. Sodexo Food and Nutrition department at Frankfort enjoy serving and being a part of the hospital community. This unit is well known in the community as a community partner. Sodexo is looking for an outstanding culinarian to propel our program forward. Reporting to our General manager, you will lead the culinary team and will plan, organize and manage the daily food production in the hospital. Our Food Production Manager will be responsible for managing the culinary operations for all food outlets including patient dining, and some cafe responsibilities include:
Managing the daily food production including production planning and controls
Ensuring Sodexo Culinary Standards including recipe compliance and food quality
Labor and food cost controls and compliance
Menu development and inventory management
Food cost management
Ideal candidate will have:
Strong culinary background.
Experience in specialized diets.
Menu planning experience.
Experience supervising a team, strong human resources, employee training/development
Ability to multitask and take on additional responsibilities.
Strong understanding of food forecasting, purchasing, inventory, and labor management.
Strong financial acumen
Proficient computer skills, exceptional organization, and customer service skills.
Strong knowledge of HACCP
Experience with health and safety audits and regulatory inspections
Qualifications for our Food Production Manager include prior culinary management experience in a high volume healthcare environment, strong food production planning management and food cost management experience, computer literacy, full HACCP knowledge and ServSafe certification. Frankfurt Small acute care hospital 120 bed hospital very community oriented. The total department is about 25 employees
Plans, directs and coordinates the activities of food production employees. Responsible for the purchasing and receiving of food and supplies, as well as monitoring the inventory. Maintains food production records/cost indicators. Plans and costs menus.
Qualifications & Requirements
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
