Sodexo Government North America is seeking an experienced Food Production Manager 3 on Camp Pendleton Air Station USMCat2403 mess hall
The United States Marines have high level food service expectations and this account will require the Sodexo staff to be top of their profession. In Government Services contract compliance is critical with safety and customer service a high priority as extensive audits and surveys are conducted at each unit onaweekly basis. Sodexo offers innovative and healthy concepts while keeping to a strict profit and loss financial statement.
The Food Production Manager will report to theGeneral Managerand will help support the Sodexo team to meet all the needs of the USMC and Sodexo standards.
Sodexo provides best in class services for the USMC at this outstanding account in the Camp Pendleton District for Government Services.
Reporting to the General Manager, you will lead the culinary team and will plan, organize and manage the daily food production. The Production Manager will be responsible for managing the culinary operations.Food Production Managers are also required to follow the USMC Chain of Command and base hierarchy regarding operational issues and contractual questions.
Managing the daily food production including production planning and controls
Ensuring Sodexo Culinary Standards including recipe compliance and food quality
Labor and food cost controls and compliance
Menu development and inventory management
Food cost management
Training and Development for the culinary team
Qualifications for the Production Manager include:
Prior culinary management experience
Food production planning management
Food cost management
HACCP knowledge and ServSafe certification.
This position requires a unique culinary passion for fostering relationships with Sodexo staff and USMC while providing a compassionate and unforgettable dining experience.

Plans, directs and coordinates the activities of food production employees. Responsible for the purchasing and receiving of food and supplies, as well as monitoring the inventory. Maintains food production records/cost indicators. Plans and costs menus.
Qualifications & Requirements
Basic Education Requirement - Technical, Trade, or Vocational School Degree
Basic Management Experience - 1 year
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
